Pumpkin Obsessed

I am a pumpkin freak. I can't help myself, I love it. This time of year (and all times of year, lesbeonist) I crave the sweet and spiceful taste of pumpkin flavored everything. However, 93% of the time all the pumpkin things you can get have 7,000 calories at least, so I try to avoid them for that reason alone. This makes me sad.

So this year I am on a mission to consume all the pumpkin flavored things, without consuming 7 million calories. Sound good? Lets do this!

I turned to Pinterest for some help finding lighter pumpkin recipes, and it didn't disappoint! My goal is try all of these out one by one, and report my findings :D

Pumpkin Smoothie
This smoothie would be a healthy way to get your pumpkin fix, without all the carbs that normally come with it. I could see adding coffee for a fun Pumpkin Spice Frappuccino vibe :D

Oatmeal Dark Chocolate Chip Pumpkin Muffins
If I am honest, that picture doesn't make my mouth water, BUT I love the idea of dark chocolate, pumpkin and oatmeal together! I love oatmeal and I love finding new ways to use it. I think these muffins could be fantastic. 

Pumpkin Carrot Bars with Cream Cheese Frosting
I hate carrots. I am not ashamed to say that. So hiding those nasty buggers in the midst of pumpkin delight sounds like a plan to me! I also love the decadent feeling cream cheese frosting!

Light Pumpkin Cheesecake Mousse
 You would no clue by looking at that picture, but that mousse is actually whipped cottage cheese. YUM! I am dying to put that in my mouth.

So my goal is to forego the Olive Garden Pumpkin Cheesecake, and the Starbuck's PSL, and all the pumpkin bagels and doughnuts and breads and pies I can, but in return indulge in these lighter, still pumpkinful dishes.

Do you love pumpkin? Do you EFFING hate it? My husband hates it. It's a character flaw. Actually I don't mind because I get to eat ALL.THE.PUMPKIN.THINGS.

  2. I made these chocolate chip PUMPKIN cookies last week, and they are Ah-may-zing!! They're super soft, almost muffin-y, and absolutely delicious. And, they're only about 50 calories each!
