Cupcakes- Party of 1!

If you follow me on Instagram or Facebook, you saw that this weekend I had a nasty cupcake craving that just wouldn't quit. Rather than run to a local cupcake truck and eat all.the.cupcakes, I decided to make some. But not a whole dozen or two, because lawd knows I would have eaten all of them. I made 4. 2 for me, 2 for my husband. Yep, just 4. And even better, they were vegan :D Here is my recipe, as promised!


4 Chocolate Cupcakes Recipe: (modified from brettbara.com

6 tablespoons flour
4 tablespoons sugar
3 teaspoons cocoa powder
1/4 teaspoon baking soda (just eyeball half of a quarter-teaspoon and it will be fine)
1/8 teaspoon salt (otherwise known as a pinch)
4 tablespoons cold water
2 tablespoon vegetable oil
1/8 teaspoon vanilla (ie, just a few drops)

2 tablespoon chocolate chips (optional, but seriously, add them if you have them.)

Preheat oven to 325 degrees Fahrenheit. Whisk all the dry ingredients together in a small bowl (I did it by hand). Add the dry to the wet and keep whisking! Divide batter between four cupcake liners and sprinkle with chocolate chips. Bake for 20 minutes or until a tester comes out clean. Allow to cool before frosting.

SO easy. And no eggs! I will warn you, they weren't melt-in-your-mouth chocolatey but they were moist and yummy! I am still looking for that oooey gooey chocolate cupcake recipe, so if you have one, do share! 
I obviously frosted them, but I wasn't planning on making them vegan (just noticed that they were lol) so my frosting wasn't vegan. BUT it would be easy enough to make it vegan so I will share both :D
Chocolate Chip Buttercream for 4 Cupcakes Recipe: 
1/2 stick of softened butter (I microwave a stick for 10 seconds, then turn it over one turn and do 5   more seconds. Perfectly softened :D )
1 cup powdered sugar
a pinch of salt
1/4 tablespoon vanilla extract
1 tablespoon milk or heavy cream 
1/4 cup chocolate chips

Beat the butter (I did all of it by hand with a whisk) until it's smooth. Add the powdered sugar a little at a time and whisk it in. Now is a good time to switch to a spatula. I just used a spoon to get all the goodness out of the whisk. Add in the salt, vanilla and half of the cream/ milk and stir stir stir. If it is still too thick, add more cream. Once it is where you want it, fold in the chocolate chips. Sadly it won't pipe very well (I tried) but it is so yummy and really since you only made 4, no one is going to see it so just spread it on and enjoy :D 

To make it vegan, use shortening instead of butter, and almond milk or something instead of cream. To make it more buttery tasting, you can get vegan butter "extract" flavoring, but it will taste pretty much the same without it. 



You can obviously cut it in half and make just 2. 

Here is why I think it's okay that I am teaching you how to make cupcakes on a "weight loss" blog. Depriving yourself is BAD. And I know that for me if I don't satisfy a craving like that, it will go horribly wrong. I don't eat cupcakes very often, like once every 3-4 months, but when I want them, holy hell I want them. Which is OKAY. The real lesson here is portion control. 2 cupcakes isn't going to kill me or throw me off. It just isn't. In fact, probably just the opposite. It keeps me on the right track. Sure, this isn't a particularly healthy recipe, but hell it's delicious! 

So be mad if you want to, but if you think self deprivation is the way to long term weight loss success, we don't agree. And I am okay with that.

  1. These look delicious! I'm all for indulging in a little of what you fancy. How boring would life be if you couldn't enjoy something you love?! Making your own is even better. At least you know exactly what's in your food :)
