Weight Watchers Menu- January 13-19

Week 3 of menus are finally up :) I realized half way into making it that I probably wouldn't be eating most of the things on it because I am starting my Commit to Fit challenge next week. I know I haven't really gone into detail about this challenge yet, but don't worry, a big post is coming on Tuesday. As part of the challenge, I will be meeting with a nutritionist so what they say will change what I eat. BUT I still wanted to provide this for you all :)

Also, you might be curious how I keep track of all the things I know how to cook. Well until about 30 minutes ago, I didn't! It made this menu making thing pretty hard. So I sat down and made a comprehensive list that we can pull from. That helps a TON! I recommend doing this for your daily menu planning :)

Time for the breakdown!

Sunday:
  • For the Buffalo Chicken, we are just going to cook the chicken (we boil it, but you could grill or bake or cook it however you prefer) and toss it in a buffalo chicken sauce we have. Easy Peasy.
Monday:
  • Have I told you how much I LOVE hard boiled eggs? No? Well I freaking love them. Enough said. 
  • For the Fajita Quesadillas (which I just realized I spelled wrong on the menu #notanenglishmajor…) we will brown onions, peppers cook the chicken then put it in carb balance tortillas with low fat cheese. 
Tuesday:
  • My favorite Greek Yogurt is the 100 cal kind by Yoplait. It's only 2 pts and I love it. Feel free to use whatever kind you like best. Alex is quite partial to Fage. 
  • Also for granola, I will be making my own using the recipe we posted a few weeks ago on Fitspiration Friday
  • For the salad, we are just going to shred up some of the chicken from Sunday and stick it on a salad. 
  • We make Philly Steak sandwiches very similar to this, and I LOVE this low carb option because I usually forgoe the bread. Peace, Love, and Low Carb has this recipe that looks amazing.
Wednesday:
  • I have a confession. I love McDonalds' Egg McMuffin. They are 8 pts of deliciousness, but I HATE that they are fast food. I know I could make them for less and they would be better for me, so when I came across this recipe at Home Beccanomics, I knew I would have to try these. I don't like the frozen Jimmy Dean kind because the eggs taste like dirty sponges. Ew. 
  • I keep finding granola bar (or even ball) recipes that look too good to resist. I enjoy Larabars (not nearly as much as Alex, but they're ok) but I think I could make something better. I am using this recipe from Lauren's Latest
  • Here is the recipe I mentioned on Facebook last weekend! This Mac n Cheese was delish! Found on The Family Kitchen
  • For Chicken Parm, we pound out a chicken breast, and cut it in half, dredge in flour, then eggs, then smashed up Corn Flakes. We put a tablespoon of oil in the bottom of a pan and pan fry until cooked. Then we put spaghetti sauce on top, and a slice of provolone, and bake until the cheese is melted. This is delish by itself, but its great over spaghetti too :)
Thursday:
  • I love take out chinese food, but it is often packed with calories and sodium. This beef and broccoli recipe is straight from Weight Watchers and looks delish for only 5 pts! 
Friday:
  • I found this really yummy recipe for Spaghetti and Meatball soup, but for some reason the website is down :/ Here is the link in case it comes back, but it was a mix of Spaghetti sauce and chicken broth (I think…) then you add in meatballs and spaghetti noodles that are cut in half. I recommend adding the noodles right before you go to eat it because they soak up all the broth and isnt as good the second day. So add them separately :)
Saturday:
  • I found this lemon shrimp scampi recipe on Daydream Kitchen that looks nice and light :)
